Refrigerator Bread and Butter Pickles Recipe

Do you like bread and butter pickles? 


My dad and step-mom used to make B & B pickles every year. They made dozens of jars at a time, and had them ready for months ahead. They were delicious.

My daughter, Susan, loves to make refrigerator bread and butter pickles, too.

Her family enjoys them so much, she has trouble keeping them in the fridge. Susan does not make dozens of jars. Instead, she makes them as she needs them.

Her recipe for refrigerator bread and butter pickles is below.


Suze's Refrigerator Bread and Butter Pickles


1 cup string vinegar
1 ½ cup sugar, or Splenda ®
1 tbsp. canning salt
6 sliced cucumbers
1 head onion-sliced
1 green pepper-sliced
1 tbsp. jamaican allspice
1 tbsp. peppercorn mélange

Heat first three items, and allspice until dissolved and let cool.
Slice cucumbers, onions, and peppers and place in a jar or container that will close tightly.
Pour cooled vinegar mixture over these and store in refrigerator. Sprinkle top with peppercorns.

The bread and butter pickles keep indefinitely, but they don't last long enough to have concerns over them.
