Cheesy Spinach Stuffed Meatloaf Recipe

Spinach is one of those nutritional powerhouses that many kids refuse to eat. Even some adults don't care for spinach. Personally, I love it. I love it raw, I love it cooked, I love it in casseroles, quiche, salads, and more.

This Cheesy Low Carb Spinach Stuffed Meatloaf recipe was one of my mother-in-law's favorite meatloaf meals. I don't know where she got it. I was so happy to find it in the recipes my father-in-law gave to me after she passed away. I hope you enjoy it as much as we do.

Leafy green vegetables, including spinach,
have lots of antioxidants and are
good for your health!

Homemade Spinach Pasta

I don't know of anyone who likes pasta that does not prefer homemade--if they've ever eaten homemade.

One my favorite pastas is a vegetable pasta: spinach pasta.

Spinach pasta works in almost any dish that calls for pasta.

Easy Spinach Pasta Recipe

  • 1 1/2 cups spinach leaves, torn into small pieces
  • 2 tbsp. water
  • 1 egg
  • 1 1/4 cups all-purpose flour

Instructions:
  1. Simmer spinach in water until tender.
  2. Pour cooked spinach and water into a blender and blend. Add egg and blend until thoroughly mixed.
  3. Put into a stand mixer bowl.
  4. Add the flour to the spinach and mix on low speed to make the dough. If it crumbles add water 1 tsp. at a time.
  5. Change to a bread hook and knead for 1 minute.
  6. Break the pasta dough into 4 or 5 pieces and run through the pasta roller at the largest setting to make a long flat dough.
  7. Put through the roller several times until the dough is smooth and elastic. Change to a pasta cutter. Set it to the size pasta you want, and put the dough through the cutter.

To Save Pasta for Later

For later use, spread pasta on a rack to dry. After the pasta is thoroughly dry, store in an air tight container until use.

When you cook it, cook in boiling water for 7 to 10 minutes.

To Cook Pasta Immediately

If you are cooking it immediately, it will not need to cook more than 3 to 5 minutes.

Serve with your favorite sauce and enjoy!

When you make your own pasta,
you know it is healthy!
